Sgetti

So there have been a few folks that have liked my spaghetti recipe and this year the girls are getting together for this years Thymes & Seasons so I have been dubbed to show and tell my red sauce.  This sauce is really easy and versatile.  You can use it for spaghetti, lasagna, chicken parmesan, or any time you need some red sauce.  Its great to hide veggies in for picky eaters who don't like veggies, cuz if you like it, throw it in.  If the kids don't like it and you want them to eat it, throw it in!  Its simple and delicious.

So first, in this round, is my cast of characters.
We have salt, pepper, Italian seasoning, BBQ stubbs rub seasoning, tomato paste, tomato sauce, peppers (yellow and green), carrots, zucchini, celery, onion, olives, garlic, butter, mushrooms, spaghetti noodles, chopped tomatoes, olive oil, Worcestershire sauce, white sugar and in this case I have some venison meat. mmmm....

So first thing, I brown the meat.  This time I used venison, but you can use beef, or italian sausage or a little bit of both, if you wanted to go low fat...why??  you could even use ground turkey.  Just use 1 pound of meat.

I toss a few of the onions in with the meat to help season up the meat, and maybe a little pinch of that yummy garlic too.  Next I put about a teaspoon or two of that Stubbs Rub BBQ seasoning.  If you don't have any you can skip it or add your favorite seasoning.  mmmm smells yummy.  Once thats browned, set it aside.

Next, in a dutch oven or other big pot, I melt about a 1/2 cube of butter, yes butter.
Then toss in the onion, celery and carrots and saute in the butter until slightly opaque.

Then,  toss in the garlic, peppers olives, mushrooms, zucchini and whatever other veggies you like.  really the more the merrier I say!.. or someone else I don't know says that too...

YUM!

Next put the meat back in and let simmer for a little while and let all of those flavors mingle and get to know one another.

Next, once everything is heated through, we will add the main event!  Tomatoes!!  I normally use 2 15oz cans of Organic S&W tomato sauce, 2 can of the same brand stewed tomatoes, and one small can of  tomato paste.  Now this is where the fun begins.  I then add about 3ish tablespoons of Italian Seasoning, 1 tsp black pepper,  tsp salt, about 2 Tbs Worcestershire sauce, and 1 tbs white sugar.  Think its weird?  Give it a taste before an after you add those beautiful ingredients and tell me they don't make the world of difference?  Oh yeah!  And as you are looking around and notice that you still have 1/2 cube of butter sitting there, why don't you just toss the rest of that right into the sauce, yep, go ahead, you can do it!
Look at the beauty you just created?!  mmmm

Now go and boil up some noodles and call it spaghetti!  Want lasagna sauce?  Here you go. pop it in a food processor and blend it up as a marinara.

Look its Nat Monster approved!!

mmm mom dats some good sgetti!!
